Then & Now with Chef Jamie Purviance
Visit the IKEA Cooking Stage to see Jamie Purviance—chef, James Beard Award nominee, and cookbook author—take a 1960s Weber recipe and remix it with modern day ingredients and techniques to come up with a fresh new grilling dish. The original Weber recipe, “Tournedos Heloise,” was first featured in the 1967 Sunset Barbecue Cookbook and inspired by Julia Child, who was known for her heavy French flavors. To lighten up the recipe, Jamie will pair the classic French flavors of red wine and mushrooms with lean, beef tenderloin steaks. He will demo “Beef Tenderloin with Seared Mushrooms and Red Wine Vinaigrette” and “Roasted Beet and Goat Cheese Salad,” both of which are featured in Weber’s newly released cookbook, Weber’s New Real Grilling™.
